Try this Pancake Waffle Cupcake with Maple Frosting for a fun and delicious twist on breakfast!
1 Cup flour
1/2 TBSP sugar
1 tsp baking powder
½ tsp salt
¾ C whole milk
1 TBSP butter, melted and cooled
1 Box of Eggo mini waffles
Whisk together the flour, sugar, baking powder and salt in a large mixing bowl.
In another bowl, whisk together the milk, eggs and butter.
Pour the wet ingredients over the dry and stir just until moistened.
Bake for 10 minutes.
Cool in the pan for 5 minutes then transfer to a wire rack.
1 C unsalted sweet cream butter
3 C powdered sugar
4 TBSP heavy whipping cream
1 TBSP maple syrup
Add all ingredients into a standing mixer and mix until combined and stiff peaks.
Frost the cupcake, place a eggo waffle on top and drizzle with maple syrup.
