I wanted to share this super easy and very frugal recipe for Crock Pot Mexican Chicken Soup with you today. This recipe is very similar to Totilla Soup, but minus the tortilla part.
I had a couple pieces of leftover chicken breast that I needed to use, and this recipe is perfect for situations like that. We stopped in at Dollar General to pick up a few ingredients.
I will admit that I rarely think to buy groceries from Dollar General, but the prices were SO good!
I stopped in to pick up some chicken broth, parmesan cheese, corn, tomatoes, and cheddar cheese.
I chose all Clover Valley products which happen to be the Dollar General product line and was pleased by the prices and overall quality of the items I chose.
Crock Pot Mexican Chicken Soup Recipe
Ingredients:
2 Pieces Shredded Chicken Breast
1 can Chicken Broth 14.5 oz
1 can Whole Kernal Corn
1 can Whole Tomatoes 15 oz
1 Onion chopped
1 Can TomatoesChopped with Green Chilis
2 Cloves Garlic
1 tsp Cumin
1 tsp Chili powder
1 tsp Salt
1/4 tsp Black Pepper
1 Bay Leaf
It takes about 5 minutes to add everything to the Crock Pot. Then cook on low 6-8 hours and enjoy with some shredded cheese or sour cream on top.
Don’t forget to remove the bay leaf before serving.
