- 8 cups all-purpose flour
- 1 cup sugar
- 1/3 cup baking powder
- 1 tablespoon salt
- 1 cup shortening
To make muffins:
- 1 egg
- 1 cup milk
- Mix-ins if desired, like frozen berries, chocolate chips, nuts, etc.
- Toppings if desired, like coarse sugar, streusel crumble, etc.
To prepare the mix, combine the dry ingredients. Cut in the shortening until the mixtures resembles sand. Divide into 2 ½ portions and store in jars or zip top freezer bags.
To prepare the muffins, combine the egg and milk until well blended. Add the muffin mix and any mix-ins just until evenly mixed.
Divide the muffin batter between muffin cups. Top if desired.
Bake the muffins in a preheated oven set to 425 degrees for 15 to 18 minutes. Remove from the oven and cool for about 5 minutes in the muffin pan before removing the muffins to cool on a wire rack.
