Ingredients

  • 1 lb asparagus
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup Panko crumbs or other bread crumbs
  • 2 tbsp chipotle sauce
  • 1/2 lime, squeezed
  • 1 egg
  • 1 cup mayonnaise

Instructions

  • Wash and cut woody ends off asparagus.
  • Blend Parmesan cheese and panko crumbs.
  • Dip asparagus into eggs and then into crumb mixture.
  • Bake at 350° for 10-15 minutes or until asparagus are tender.
  • Combine mayonnaise, lime juice, and chipotle sauce together until well-blended for dipping sauce.
