Candy Cane Cupcakes

Festive Candy Cane Cupcakes recipe.

Ingredients

  • 1 box Cake Mix
  • 3 Eggs
  • 1 cup Water
  • 1/3 cup Vegetable Oil
  • 24 small candy canes
  • 1 cup butter softened
  • 1 tsp vanilla extract
  • 4 cups confectioners sugar
  • 2 tbsp milk
  • 1/2 cup crushed starlight mints or candy canes

Instructions

  • Make cupcakes according to directions.
  • Let cool.
  • In a large bowl, cream the butter and add vanilla.
  • Mix in the sugar one cup at a time.
  • Beat in the milk mixing until fluffy.
  • Tranfer icing to the corner of large size zipper bag, try to minimalize trapped air and close. Clip a small piece off the corner to pipe.
  • Ice the top of the cupcake.
  • Sprinkle top with crushed mints.
  • Stick a candy cane in the top of each.
