- 2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1 cup 2 sticks butter or margarine, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 cup pureed pumpkin
- 1 large egg
- 2 teaspoons vanilla extract
- 1 bag 12 oz white chocolate chips
- 1/2 cup chopped macadamia nuts
Preheat oven to 350° F.
Combine flour, cinnamon and baking soda in small bowl. Beat butter, granulated sugar and brown sugar in large mixer bowl until creamy. Beat in pumpkin, egg and vanilla extract into the sugar mixture until blended. Gradually beat in flour mixture. Stir in morsels and nuts.
Drop by spoonfuls onto baking sheets
Bake for 12 minutes and cool on wire racks.
