Pancake Waffle Cupcake with Maple Frosting

This pancake cupcake has a sweet syrup flavor with a waffle added to the top.

  • 1 Cup flour
  • 1/2 TBSP sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ C whole milk
  • 1 egg
  • 1 TBSP butter melted and cooled
  • 1 Box of Eggo mini waffles

Frosting Ingredients

  • 1 C unsalted sweet cream butter
  • 3 C powdered sugar
  • 4 TBSP heavy whipping cream
  • 1 TBSP maple syrup


  • Preheat oven to 400 degrees and line cupcake pan with cupcake liners.
  • Whisk together the flour, sugar, baking powder and salt in a large mixing bowl.
  • In another bowl, whisk together the milk, eggs and butter.
  • Pour the wet ingredients over the dry and stir just until moistened.
  • Bake for 10 minutes.
  • Cool in the pan for 5 minutes then transfer to a wire rack.

Frosting Directions:

  • Add all ingredients into a standing mixer and mix until combined and stiff peaks.
  • Frost the cupcake, place a eggo waffle on top and drizzle with maple syrup.
