This is one of those meals that can be stretched into two meals. I probably could have added some eggs to the meal this morning but I didn’t and it was just as good.

 INGREDIENTS

– Hash browns – Cream of chicken soup – Sour cream – Salt – Cheddar cheese – Green onions – Leftover Ham

HOW TO MAKE CHEESY HAM AND POTATO CASSEROLE

Preheat oven to 350 degrees F. Coat 13×9 baking dish with nonstick cooking spray.

In a large bowl, whisk together soup, sour cream, salt and pepper.

Stir in ham, cheese, onion and Hash Browns until well mixed. Spoon evenly into baking dish.

Bake uncovered for about 50 minutes, or until hot and bubbly.
