Chicken Broccoli Instant Pot Casserole Recipe

Instant Pot Casseroles are one of my favorites to make.

This chicken broccoli rice dish is so easy to make, hearty, and loads of comfort in every single bite.

Even picky eaters will love this easy cheesy casserole.

If you have an Instant Pot you know how awesome they are. One of my favorite ways to cook rice is in the pressure cooker.

It really helps take the guesswork out of that perfect rice!

Do You Use Fresh Or Brozen Broccoli 

Either! You are more than welcome to reach for frozen broccoli or fresh.

I love using frozen as you can save some money buying frozen.

Broccoli is picked and frozen at its prime so you will have good quality broccoli if you reach for frozen. 

In this recipe, you are adding your broccoli in and allowing it to essentially steam it a bit until it reaches your desired texture.

So, if you do fresh you will want it to sit a bit longer, or you can add it in and cook with the recipe, it will just be a lot softer.

What To Serve With This Casserole 

Essentially this could be a meal in one!

Otherwise, if you are thinking about what to go next to it, here are more ideas.

A crisp salad, steamed or roasted vegetables, dinner rolls, etc. 

I find that chicken and rice can really honestly go with almost anything. We enjoy doing a salad to help lighten up the recipe a bit. 

How to Make Instant Pot Chicken and Rice Casserole

Using the saute’ mode, heat the electric pressure cooker until “hot.”

Mix the dry seasonings together. Sprinkle the seasonings on the chicken.

Add the olive oil to the electric pressure cooker. Brown the chicken on all sides.

Add the onion to the chicken. Cook until the onion is softened, about 3 to 5 minutes.

To the electric pressure cooker, add the chicken broth. Scrape the bottom to remove any cooked on pieces. Cancel the saute’ mode.

Pour the rice over the chicken. Do not stir.

Place the lid on the electric pressure cooker and set the valve to sealing.

Set the pressure cooker to “manual” or “pressure cook” for 10 minutes.

Quick release the pressure when the cook cycle is complete.

Stir in the broccoli and 2 cups of cheese.

Replace the lid and allow the electric pressure cooker to “keep warm” until the broccoli has softened to your desired tenderness.

Ideally, this will take 10 to 15 minutes.

Ingredients
  

  • 2 tablespoon olive oil
  • 2 pounds boneless skinless chicken breast, cut into bite-size pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried thyme leaves
  • 1 medium onion diced
  • 1 1/2 cups white rice
  • 2 1/2 cups chicken broth
  • 3 cups shredded cheddar cheese divided
  • 4 cups frozen broccoli florets

Instructions
