Samoas Cookie Bars Recipe

This Keto friendly, low-carb recipe will satisfy your sweet tooth with the perfect mix of chocolate, caramel and coconut flavors you love from traditional Samoas Girl Scout cookies we all grew up with.


Almond Flour Crust:  – Almond flour – Stevia Sweetener – Salt – Butter Chocolate Filling and Drizzle: – Sugar free chocolate chips – Coconut oil or butter Coconut Caramel Filling: – Shredded coconut – Butter – Swerve Brown – Heavy whipping cream – Pure vanilla extract – Salt


Preheat the oven to 325F. Whisk together the almond flour, stevia sweetener, and salt.

Melt butter and into flour mixture until the mixture is well incorporated and crumbly.

Bake 15 to 18 minutes, until just golden brown. Remove and let cool. While this is cooling you can prepare your filling.
