I am a huge fan of Girl Scout cookies and my favorites are Samoas. Maybe you know them by their new name, Caramel deLites?
Thankfully this Samoas Cookie Bars is perfect for those of us that love Samoas but are working to keep our carbs in check.
This Keto friendly, low-carb recipe will satisfy your sweet tooth with the perfect mix of chocolate, caramel and coconut flavors you love from traditional Samoas Girl Scout cookies we all grew up with.
I love making this Samoa cookie recipe as bars instead of cookies, because it is SO EASY.
It’s a much quicker process making them this way.
Besides can you imagine how much work it takes to do a shortbread cookie, topped with chocolate topping, then topped with coconut topping and finally drizzled with more chocolate?
No thank you! That’s way too much work for me. I’m guessing you have better ways to spend your time too.
Instead of individual cookies, I just do each of those layers once, in one big pan, and then stick that one pan into the oven to bake.
Once they come out of the oven, I simply slice them up into bars, drizzle on a little more chocolate and they are ready to be eaten right away.
Samoa Cookie Bars
There are four different steps to this recipe for Samoa Bars – the shortbread cookie crust, chocolate filling, caramel coconut filling and chocolate drizzle on top.
You’ll need to gather the following ingredients before you get started on this recipe.
Cookie Bars Shortbread Crust
- almond flour
- Swerve sweetener
- salt
- butter
Cookie Bars Chocolate Filling & Drizzle Topping
- sugar free chocolate chips
- coconut oil or butter
Coconut Caramel Filling
- shredded coconut
- butter
- Swerve Brown
- heavy whipping cream
- pure vanilla extract
- salt
Make sure that you only use Lilys sugar free chocolate chips if you are following a strict KETOGENIC diet.
This recipe makes about 14 – 16 small cookie bars.

Recipe for Samoa Cookie Bars
I just love the combination of chocolate, caramel and coconut flavors on top of a delicious almond flour shortbread crust.
Satisfy your Girl Scout cookie cravings with this low-carb copycat recipe today!
Almond Flour Crust
Preheat the oven to 325º F. Whisk together the almond flour, stevia sweetener, and salt.
Melt butter and into flour mixture until the mixture is well incorporated and crumbly.
Flatten out the mixture into an 8×8 baking pan and press firmly into the bottom.
Bake 15 to 18 minutes, until just golden brown. Remove and let cool. While this is cooling you can prepare your filling.
Samoa Cookie Bars Tip: You can also add a layer of parchment paper in the bottom if you want an easier way to pull the bars out.
Chocolate Filling
In a microwave safe bowl, melt the chocolate and coconut oil stirring in between, I did 30 second increments until melted and smooth.
Use about 2/3 of the chocolate mixture and spread over the cooled almond crust. The rest will be saved to drizzle over the top.
Coconut Caramel Filling
Over medium heat in a small skillet spread the coconut out. Stirring frequently, until toasted and light golden brown. Set aside.
Over medium heat in a large saucepan, combine the butter and sweeteners. Cook until melted and then bring to a boil. Boil approximately 3 to 5 minutes.
Remove from heat and add the vanilla, cream and salt. The mixture will bubble and this is normal.
Slowly stir in the toasted coconut. Spread the mixture over the chocolate-covered crust.
Let cool for about 1 hour, then cut into squares. Reheat remaining chocolate mixture and drizzle over the bars.
The biggest problem I have found with this recipe is that they are so, so good!
I literally have to really use all of my self control to keep from eating them all myself.

- 3/4 cup heavy whipping cream
- 1/2 tsp pure vanilla extract
- 1/4 tsp salt
