I was recently asked by Van’s Foods to create some unique ways to use a new product. I wanted to share with you what I came up with because it is really SO easy to make and it tastes amazing too!
While I was in Target the other day, I saw that they carry several of these Van’s Simply Delicious® Gluten Free Whole Grain Cracker products and knew right away that I wanted to give them a try.
I had a tough time choosing just one of the varieties, so I grabbed two different ones, finished my shopping and headed for the register. I was already thinking up a recipe to make when I got home to go along with the crackers while I was standing in line.
I knew I had all the fixings for a pretty awesome taco inspired dip and was pretty excited to give it a try.

When I got home I decided to immediately open the Van’s Simply Delicious® Gluten Free, Whole Grain Crackers Say Cheese! Cracker variety and will admit that I was SO surprised by the flavor. They were so tasty that I had to refrain from eating them all so that I would still have some left for the dip I wanted to make.
This Cheesy Fiesta Bean Dip turned out really great! I can see making this a few times before the end of the summer season. It is so easy and full of flavor too!
I also bought the Lots of Everything variety that is baked with oats, brown rice, millet, quinoa and amaranth.
Since I had purchased two different flavors, I decided to mix them together in a bowl.
Both of the flavors worked really well together and with this dip. In fact I will admit that I ate a lot more of it than I probably should have, so I decided to just call it dinner 😉
Cheesy Fiesta Bean Dip Recipe
INGREDIENTS
1 cup Sour Cream
1 – 16 oz. can Refried Beans
1 package Cream Cheese (softened)
2 cups Shredded Taco Cheese
1 can sliced Black Olives
1/4 Cup Salsa
1/4 t. Garlic Powder
1/4 t. Onion Powder
1/4 t. Black Pepper
1/4 t. Salt
1/4 t. Cumin
DIRECTIONS
Add all ingredients to your food processor and mix well.
Put mixture into an oven safe dish and top with the remaining shredded cheese and black olives.
Cook uncovered for 25 minutes until bubbly.
Allow to sit for about 15 minutes to cool.
Enjoy with your favorite Van’s Simply Delicious® Foods Gluten Free, Whole Grain Crackers.

Mmm, I’ve tried the flavored crackers with Brie Cheese from Trader Joe’s but I’ll have to take a look at these next time I’m shopping
