I know it is a day late, but I decide to ignore the little voice that said just skip menu planning this week and put this one together this afternoon.
This is a step in the right direction for me since I typically would have just kept trying to wing it throughout the rest of the week when I missed making my menu plan on Monday. But I know all too well where this would lead me. Lots of last-minute stops at a restaurant or even worse a fast food place.
So I took about 10 minutes to plan dinners for the rest of the week.
Three reasons menu planning rocks:
Save Time – When you take 10 minutes at the beginning of the week to plan all of your dinners, you’ll save time each day deciding and possibly picking up ingredients from the store.
Save Money – When you don’t know what’s for dinner, you are more likely to stop at a restaurant or for fast food, and we all know this is a much more expensive option.
Save Sanity – Overall menu planning makes me feel more together. No matter how crazy the day has been, if I can pull off family dinner time then it was a successful day!
Now on to this week’s menu plan.
Breakfast and lunch is pretty much the same around my house which is why that part of the menu never changes.
Breakfasts – consists of oatmeal, cold cereal, fruit smoothies, toast & poached eggs.
Lunches – consists of soups, peanut butter or tuna sandwiches, and dinner leftovers.
Dinners – I will try to include lots of veggies this week.

Tacos
~ Thursday ~
Spaghetti w/Italian Sausage & Salad
~ Friday ~
Breakfast Burritos

(based on what meat I can pick up on markdown during my grocery shopping)
~ Sunday ~
Usually, we have a very late lunch and just find something small for dinner. Either way, I don’t plan because I like to be flexible for anything that pops up.
