An Unexpected Road Trip, Hiking the Appalachian Trail and Chasing Waterfalls

Sometimes, life throws you an unexpected adventure!

This past week, my husband and I took a spontaneous road trip to New Jerseyโ€”not exactly for a vacation, but we made the most of it.

We were delivering a trailer to a job site, which meant long hours on the road, but we both love road trips, so we turned it into a little getaway.

One of the highlights was stopping at the Delaware Water Gap to check out a section of the Appalachian Trail.

It was absolutely beautiful!

This was the cutest little church. They offer a free hostel for hikers who need a break from the Appalachian Trail. On Thursdays, they also offer a free Hikers potluck dinner.

During our trip, we made a delightful stop at the Village Farmer and Bakery in Delaware Water Gap, Pennsylvania, renowned for its fresh-baked goods and savory offerings.

There were so many things to choose from and so many samples to taste while you made your final choices.

Here’s a glimpse into the delicious pies we brought home:

Sweet Pies:

  • Shoo-fly Pie: A classic Pennsylvania Dutch dessert, this pie features a rich filling made with molasses and brown sugar, creating a sweet and gooey center that’s both comforting and indulgent.
  • Apple Pie: This timeless favorite boasts a flaky crust enveloping tender, cinnamon-spiced apples, offering a perfect balance of sweetness and tartness.
  • Fruit of the Forest Pie: A delightful medley of berries and fruits encased in a golden crust, providing a burst of natural sweetness and so many flavors in every bite.

The sky on our drive home put on the most breathtaking showโ€”fiery hues of orange, pink, and red stretched across the horizon, setting the clouds ablaze.

The way the colors melted together made it feel like the whole sky was glowing, and for a few moments, everything else faded away.

It was one of those sunsets that makes you pause, take a deep breath, and just soak in the beauty of the moment.
