Homemade Ice Cream Sandwiches are so easy to make!
This recipe includes a homemade sugar cookie filled with delicious ice cream and sprinkles.
Although it calls for plain vanilla ice cream, you could use any ice cream you love.

Homemade Ice Cream Sandwiches
These Red White and Blue Ice Cream Sandwiches would be a great treat for Memorial Day or Fourth of July!
Although this recipe uses vanilla ice cream, you could choose to use any flavor ice cream you prefer in this recipe.
Ice Cream Sandwich Ingredients
- Butter
- Powdered Sugar
- Flour
- M&Ms
- Ice Cream
- Sprinkles (optional)
Recipe for Ice Cream Sandwiches
Step 1: Preheat oven to 350 and line 2 baking sheets with parchment paper.
Step 2: Cream together butter and powdered sugar.
Step 3: Slowly add flour and continue mixing until dough forms.
Step 4: Dust work surface with powdered sugar.
Step 5: Roll out dough to about 1/4″ thick and cut out circles and place on prepared sheets.
Step 6: Reroll as necessary to make additional circles.
Step 7: Top each cookie with red and blue M&Ms.
Step 8: Bake 13-14 minutes or until they are pale golden color.
Step 9: Allow to cool on baking sheets.
Step 10: Set out ice cream to soften slightly.
Step 11: Place one scoop of ice cream on a cookie. Press another cookie gently on top to make a sandwich.
Step 12: You can optionally roll the edge of the sandwich in sprinkles.
Step 13: Place in freezer to set.
