Ingredients Needed
- Flour – Reach for all-purpose flour. Scoop the flour into the measuring cup and then level it off.
- Baking Soda
- Salt
- Granulated Sugar
- Butter – Softened. Unsalted butter. If you use salted just leave the salt out of the recipe.
- Eggs
- Sour Cream
- Bananas – Ripe, peeled, and mashed well.
- Vanilla
- Powdered Sugar – If your powdered sugar has clumps, sift it first. This will ensure a smooth and creamy frosting.

This is a quick walkthrough of how it is made.
Step 1: Preheat the oven and prep your baking pan with cooking spray.
Step 2: In a medium bowl, you will add your dry ingredients: flour, baking soda, and salt.
Mix and then set it aside.
Step 3: Then in a large mixing bowl, add the butter and granulated sugar.
Mix for 1-2 minutes to get it nice and creamy.
Step 4: Work in the eggs then beat in the sour cream and vanilla.
Mix in mashed bananas.
Step 5: Slowly add in the dry ingredients, scraping down the sides.
Step 6: Pour into the baking dish and bake as directed.
Step 7: Once done allow the cake to cool to room temperature.
Step 8: Then in a small saucepan on the stove heat the butter on medium heat and cook until the butter begins to turn an amber brown.
Step 9: Remove from the heat and whisk in the powdered sugar and vanilla.
Step 10: Add in the whipping cream and whisk until the frosting is nice and smooth.
If needed add more whipping cream.
Step 11: Frost the cake and then slice and serve.
Browned butter is where you melt butter in a pan and allow it to turn a very light brown color. It is going to create this rich and nutty flavor to the butter. It is then used in desserts from cookies to frosting and all things in between.
Make sure that you are not overmixing the cake batter, or adding too much dry ingredients. Measure the ingredients properly and mix enough to combine all the ingredients.
You can use ripe plantains instead of bananas if you want. It will offer a sweeter flavor that is going to have a more distinct flavor. Where bananas taste a bit different than plantain. But the two can be interchanged in the cake recipe.

- Add 1/2 cup of chopped pecans or walnuts to the cake batter.
- Mix in 1/2 teaspoon of cinnamon for a warm spice flavor.
- Swap the sour cream with Greek plain yogurt.
- Do 1 teaspoon vanilla extract and 1/4 teaspoon almond extract for a twist.
- Frost with buttercream frosting, cream cheese, peanut butter frosting, etc.
- Make sure that the bananas are ripe or you will lack banana flavor.
- Don’t overbake the cake or it can dry it out quite a bit.
- Using real butter is a must for making browned butter, margarine will not work.

Banana Coffee Cake
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups granulated sugar
- ½ cup butter softened
- 2 eggs
- 1 cup sour cream
- 3-4 over ripe bananas peeled and mashed
- 2 teaspoons vanilla extract
Frosting:
- ¼ cup butter
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2-4 tablespoons heavy cream
Instructions
- Preheat oven to 375F. Grease a 9×13-inch pan with non-stick cooking spray; set aside.
- In a medium bowl, whisk together the flour, baking soda, and salt; set aside.
- In large mixing bowl, beat together the granulated sugar and softened butter with an electric mixer until light and fluffy. Add the eggs and beat until well combined.
- Beat in the sour cream, mashed bananas, and vanilla extract.
- Add the dry mixture to the wet and stir just until combined.
- Pour the batter into the prepared baking pan and spread out edge to edge.
- Bake the cake at 375F for 25-30 minutes until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and cool to room temperature.
Frosting:
- Melt the butter in a skillet over medium heat and continue to cook until the butter begins to turn a light amber brown.
