Can you use fresh pumpkin instead of canned pumpkin for this recipe?

Of course you can! In fact I encourage you to do so if you have some. The canned pumpkin tastes great, but nothing tastes as good as fresh pumpkin in any recipe that calls for pumpkin puree.

Can I make this without a bundt pan?

Of course you can! Just use whatever cake or loaf pan you have and it will still come out delicious.
