Roast—Chuck roast is one of the best roasts for the slow cooker. The meat and fat marbling break down perfectly for a tender and flavorful end result.
Onion—For this dish, Reach for a yellow or white onion. This will add lots of flavor to the meat and broth.
Season Packets—You will use three packets to flavor the dish: Dry ranch seasoning mix, Italian seasoning mix, and beef gravy mix.
Consomme – Beef consomme adds an incredible richness to the gravy mixture and soaks in nicely to the veggies.
Vegetables—Mix in carrots and potatoes, as they are great with the roast.
How to Make Roast in the Slow Cooker
Step 1: Dice your onion and place it in the bottom of the slow cooker.
Step 2: Add your dry seasoning mixes to a small bowl. Set to the side.
Step 3: Place the roast on top of the onions, then sprinkle the roast with the mixture of dry seasonings.
Step 4: Pour in the condensed beef consomme.
Step 5: Add your prepped onions and carrots on top.
Step 6: Cover the slow cooker and slow cook as directed.
Step 7: Once done, you can shred the meat and serve it with vegetables.
Tips For Making Slow Cooker Roast
- Layering the ingredients in the slow cooker helps to create even flavor in the dish.
- Please ensure you add liquid over the roast so that it is cooked in liquid and stays juicy as it cooks.
- Cut the carrots and potatoes in halves or quarters so it cooks evenly in the slow cooker.
- You can sear the pot roast if you want, heat oil in a skillet, and then sear both sides of the roast for added flavor and texture.
- Evenly spread the seasoning over the ingredients. Otherwise, you will find areas that lack flavor.
- If you remove the roast before serving and find pieces of fat, remove them before serving. You can use two forks to shred the meat before serving.
Variation to Recipe
- Change up the seasonings you use. You can buy different packets or add homemade seasoning mixes to flavor the meat and vegetables.
- Add fresh herbs for more flavor, such as rosemary, thyme, etc.

Slow Cooker Beef Roast
Ingredients
- 3-4 lb beef chuck roast
- 1 large onion
- 1 packet ranch dressing mix
- 1 packet Italian dressing mix
- 1 packet beef gravy mix
- 1 can 10.5 ounces condensed beef consommé (or beef broth)
- 3-4 large potatoes
- 3-4 large carrots
Instructions
- Peel the onion and slice it across into three rounds, all equal in thickness. Place the three onion rounds (leave them whole, don’t separate into rings) in one even layer across the bottom of a large slow cooker.
- In a small bowl, combine the ranch dressing mix, Italian dressing mix, and beef gravy mix.
- Place the chuck roast in the slow cooker on top of the onions. Spread half of the seasoning mixture all over one side of the roast, then flip over and spread on the rest of the mixture.
- Pour the can of condensed beef consommé over the roast.
- Peel the potatoes and cut into 1 ½ inch chunks; place on top and all around the roast in the slow cooker.
- Peel the carrots and cut into 1 ½ inch pieces; place on top of the potatoes in the slow cooker.
- Cover the slow cooker with the lid and cook on low for 8-10 hours until the meat and vegetables are fork tender.
- Remove the meat and shred with forks. Place the meat and vegetables on a serving plate.
- Set a mesh strainer over a medium heat-safe bowl and pour the gravy from the slow cooker into the strainer so the gravy goes into the bowl while the strainer catches the scraps.
- Serve the roast, potatoes, and carrots along with the gravy.

There will be chunks of fat in the gravy, which is why I suggest straining it.
Other cuts of meat commonly used for roast will work just fine with this recipe.
The reason for placing the large pieces of onion in the bottom of the slow cooker is to lift the roast up off the bottom of the slow cooker so it’s less likely to end up completely submerged in liquid while it cooks. The onion also gives great flavor to the roast and gravy.
I like the condensed beef consume, but beef broth or stock can be used instead.
The roast can be cooked on high for about 6 hours instead of on low for 8-10.
