Weekly Menu Plan Leftover Edition

We have a TON of food leftover from my daughter’s graduation party this past Saturday.

I was so concerned about running out of food that I over compensated way too much.  This means that I won’t be shopping this week, and we’ll be eating the leftovers foods.

The challenge for me this week is going to be to make totally different meals out of the food I have here so that we won’t waste as much, but also so we don’t get sick of eating the same thing over and over again.

Now on to this weeks menu plan.

Breakfast and lunch is pretty much the same around my house which is why that part of the menu never changes.

Breakfasts – consists of oatmeal, cold cereal, fruit smoothies, toast & poached eggs.

Lunches – consists of soups, peanut butter or tuna sandwiches, and dinner leftovers.

Dinners – I will try to include lots of veggies this week.

Usually we have a very late lunch and just find something small for dinner. Either way I don’t plan because I like to be flexible for anything that pops up.

  1. I usually make our leftovers into soup. I have 2 basic recipes that I use for this and a few variations, but they stretch a small bit of leftovers into many meals (I sometimes freeze the soups too) and feed all 9 of us.
